Zucchini Patties

Here’s a simple and delicious recipe for Zucchini Patties – crispy on the outside, tender on the inside, and perfect as a side dish, snack, or vegetarian main:


🥒 Zucchini Patties Recipe

Ingredients:

  • 2 medium zucchinis, grated

  • 1 teaspoon salt (for draining zucchini)

  • 1 egg, lightly beaten

  • 1/4 cup grated Parmesan cheese

  • 1/2 cup breadcrumbs (or almond flour for gluten-free)

  • 1/4 cup finely chopped onion

  • 1–2 cloves garlic, minced

  • 1/4 teaspoon black pepper

  • Optional: chopped fresh herbs (like parsley or dill)

  • Olive oil or neutral oil, for frying


Instructions:

  1. Grate and Drain Zucchini:

    • Grate the zucchini and place it in a colander.

    • Sprinkle with salt and let sit for 10–15 minutes to draw out moisture.

    • Squeeze out as much liquid as possible using a clean kitchen towel or paper towels.

  2. Mix the Batter:

    • In a bowl, combine the drained zucchini, egg, Parmesan, breadcrumbs, onion, garlic, pepper, and any optional herbs.

    • Mix until everything is evenly combined. The mixture should be moist but hold its shape when formed into a patty. Add more breadcrumbs if needed.

  3. Form Patties:

    • Scoop out about 2 tablespoons of the mixture and form into small patties.

  4. Cook:

    • Heat a thin layer of oil in a skillet over medium heat.

    • Fry the patties for 3–4 minutes per side or until golden brown and crispy.

    • Transfer to a paper towel-lined plate to drain excess oil.
