Here’s a tasty and simple Zucchini Cheese Bread recipe for you! It’s moist, cheesy, and perfect for a snack or a light meal.


Zucchini Cheese Bread

Ingredients:

  • 2 cups grated zucchini (about 1 medium zucchini)

  • 1 ½ cups all-purpose flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • ½ tsp salt

  • 1 tsp dried oregano (optional)

  • 2 large eggs

  • ½ cup olive oil or vegetable oil

  • ½ cup plain yogurt or sour cream

  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)

  • ¼ cup grated Parmesan cheese (optional, for extra flavor)

  • 2 cloves garlic, minced (optional)

  • Freshly ground black pepper, to taste


Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.

  2. Prepare zucchini: Grate zucchini and gently squeeze out excess moisture using a clean kitchen towel or paper towels.

  3. Mix dry ingredients: In a large bowl, whisk together flour, baking powder, baking soda, salt, oregano, and black pepper.

  4. Mix wet ingredients: In another bowl, beat the eggs, then add oil and yogurt (or sour cream). Stir until combined.

  5. Combine: Add the wet mixture to the dry ingredients and mix gently until just combined. Fold in the grated zucchini, shredded cheese, Parmesan, and garlic (if using).

  6. Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for about 50-60 minutes or until a toothpick inserted in the center comes out clean.

  7. Cool: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.


Tips:

  • You can add herbs like basil, thyme, or rosemary for extra aroma.

  • Try mixing in chopped nuts or seeds for crunch.

  • Serve warm or at room temperature, plain or with a spread like cream cheese or butter.
