Zesty Lemon Butter Fish Fillets

Ingredients:

4 fish fillets (such as cod, tilapia, or haddock)

2 tablespoons olive oil

3 tablespoons unsalted butter

3 cloves garlic, minced

Juice of 1 large lemon (about 3 tablespoons)

Zest of 1 lemon

1 tablespoon fresh parsley, chopped (optional)

Instructions:

Season the fish: Pat the fillets dry with paper towels. Season both sides with salt and pepper.
