Yogurt Sponge Cake, or Bizcocho de Yogur, is a popular Spanish cake known for its light, airy texture and subtle flavor. It’s often enjoyed as a snack, breakfast treat, or dessert. The recipe is simple, and it’s made with ingredients that are easy to find in most kitchens. Here’s how to make it:

Ingredients:

  • 1 cup of plain yogurt (you can use Greek yogurt for a thicker texture)

  • 2 cups all-purpose flour

  • 1 cup sugar

  • 1/2 cup vegetable oil or melted butter

  • 3 large eggs

  • 1 tablespoon baking powder

  • A pinch of salt

  • Zest of 1 lemon (optional, for added flavor)

  • A few drops of vanilla extract (optional)

Instructions:

  1. Preheat your oven: Set it to 350°F (175°C) and grease a round cake pan (about 9 inches) with butter or oil, or line it with parchment paper.

  2. Mix the wet ingredients: In a large mixing bowl, whisk together the yogurt, sugar, and eggs until well combined. Add the vegetable oil (or melted butter), lemon zest, and vanilla extract (if using), and continue mixing until smooth.

  3. Sift the dry ingredients: In a separate bowl, sift the flour, baking powder, and salt to avoid lumps. This helps the cake rise evenly.

  4. Combine the wet and dry ingredients: Gradually add the dry ingredients to the wet mixture, folding gently with a spatula or mixing spoon. Stir until just combined. Be careful not to overmix, as this can result in a denser cake.

  5. Bake: Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

  6. Cool: Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Afterward, transfer it to a wire rack to cool completely.

  7. Serve: You can serve the cake as-is or dust it with powdered sugar. If you like, you can also drizzle it with honey, spread a bit of jam, or serve it with fresh fruit.
