Here’s a Yellow Squash Tots recipe — a healthy and tasty twist on classic tater tots, using fresh yellow squash! These are perfect as a snack, appetizer, or even a veggie-packed side dish.


Yellow Squash Tots Recipe

🧄 Ingredients:

  • 2 cups grated yellow squash (about 2 medium squash)

  • 1/4 cup onion, finely chopped

  • 1/3 cup breadcrumbs (panko or regular)

  • 1/4 cup grated Parmesan cheese

  • 1 egg, lightly beaten

  • 1/2 tsp garlic powder

  • Salt and pepper to taste

  • Optional: 1–2 tbsp chopped fresh parsley or chives

🥣 Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

  2. Prepare the squash:

    • Grate the yellow squash using a box grater.

    • Place it in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This is key to avoiding soggy tots.

  3. Mix the ingredients:

    • In a large bowl, combine the drained squash, onion, breadcrumbs, Parmesan, egg, garlic powder, salt, and pepper. Mix until well combined. Add herbs if using.

  4. Shape the tots:

    • Scoop about 1 tablespoon of mixture and shape it into small cylinders (like mini tater tots). Place them on the prepared baking sheet.

  5. Bake:

    • Bake for 20–25 minutes, flipping halfway through, until golden brown and crispy.

🔥 Optional:

  • For extra crispiness, spray the tots with a bit of cooking oil before baking.

  • Serve with ketchup, ranch, or your favorite dipping sauce.
