Wet Burritos Recipe
Ingredients:
For the burritos:

4 large flour tortillas

1 lb ground beef (or shredded chicken/beans for vegetarian)

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning (or homemade: chili powder, cumin, paprika, salt)

1 cup cooked rice (optional)

1 can refried beans (about 15 oz)

1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)

1/2 cup chopped cilantro (optional)
For the red sauce:

2 tablespoons vegetable oil

2 tablespoons all-purpose flour

1 cup beef broth (or chicken/vegetable broth)

1/2 cup tomato sauce

1 teaspoon chili powder

1/2 teaspoon cumin

Salt and pepper, to taste
For topping:

Instructions:

Prepare the filling:

In a large skillet over medium heat, cook the ground beef with diced onion and garlic until the meat is browned and onions are softened.

Drain any excess fat.

Add taco seasoning and a splash of water, stir and cook for a few minutes until well combined.

Stir in cooked rice and refried beans until heated through. Remove from heat.

Make the red sauce:

In a saucepan, heat oil over medium heat.

Whisk in flour and cook 1–2 minutes until slightly browned (this makes a roux).
