Wet Burritos

Here’s a classic Wet Burritos recipe — super tasty, hearty, and smothered in sauce and cheese. Perfect for a comforting meal!


Wet Burritos Recipe

Ingredients:

For the burritos:

  • 4 large flour tortillas

  • 1 lb ground beef (or shredded chicken/beans for vegetarian)

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 packet taco seasoning (or homemade: chili powder, cumin, paprika, salt)

  • 1 cup cooked rice (optional)

  • 1 can refried beans (about 15 oz)

  • 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)

  • 1/2 cup chopped cilantro (optional)

For the red sauce:

  • 2 tablespoons vegetable oil

  • 2 tablespoons all-purpose flour

  • 1 cup beef broth (or chicken/vegetable broth)

  • 1/2 cup tomato sauce

  • 1 teaspoon chili powder

  • 1/2 teaspoon cumin

  • Salt and pepper, to taste

For topping:

  • More shredded cheese

  • Sour cream

  • Chopped green onions

  • Sliced jalapeños (optional)


Instructions:

  1. Prepare the filling:

    • In a large skillet over medium heat, cook the ground beef with diced onion and garlic until the meat is browned and onions are softened.

    • Drain any excess fat.

    • Add taco seasoning and a splash of water, stir and cook for a few minutes until well combined.

    • Stir in cooked rice and refried beans until heated through. Remove from heat.

  2. Make the red sauce:

    • In a saucepan, heat oil over medium heat.

    • Whisk in flour and cook 1–2 minutes until slightly browned (this makes a roux).

    • Slowly whisk in broth, tomato sauce, chili powder, cumin, salt, and pepper.

    • Bring to a simmer, stirring occasionally until thickened, about 5 minutes.

    • Adjust seasoning if needed.

  3. Assemble the burritos:

    • Preheat oven to 375°F (190°C).

    • Lay out each tortilla, spoon some beef mixture into the center, top with a little shredded cheese and cilantro.

    • Roll the tortillas tightly and place seam-side down in a baking dish.

  4. Bake with sauce:

    • Pour the red sauce evenly over the burritos.

    • Sprinkle extra shredded cheese on top.

    • Bake uncovered for 15-20 minutes until cheese is melted and bubbly.

  5. Serve:

    • Remove from oven and top with sour cream, green onions, and jalapeños if desired.

    • Serve hot and enjoy!
