🍇 Warm & Sweet Blackberry Cobbler

🫐 Ingredients:

For the blackberry filling:

  • 4 cups fresh or frozen blackberries (if frozen, do not thaw)

  • ¾ cup granulated sugar

  • 1 tbsp lemon juice

  • 2 tbsp cornstarch

  • 1 tsp vanilla extract

  • ½ tsp ground cinnamon (optional)

For the cobbler topping:

  • 1 cup all-purpose flour

  • ½ cup granulated sugar

  • 1½ tsp baking powder

  • ¼ tsp salt

  • ½ cup (1 stick) unsalted butter, melted

  • ½ cup milk (whole or 2% preferred)

  • 1 tsp vanilla extract


🧑‍🍳 Directions:

1. Preheat the oven:

Preheat your oven to 375°F (190°C). Lightly butter a 9-inch square or round baking dish.


2. Make the blackberry filling:

In a large mixing bowl, combine blackberries, sugar, lemon juice, cornstarch, vanilla, and cinnamon. Gently toss until berries are evenly coated. Pour mixture into the prepared baking dish.


3. Prepare the cobbler topping:

In a separate bowl, whisk together the flour, sugar, baking powder, and salt. Add melted butter, milk, and vanilla. Stir just until combined — don’t overmix.


4. Assemble:

Spoon the batter evenly over the blackberry mixture. It doesn’t have to cover everything — gaps are okay; they allow the fruit to bubble up beautifully.


5. Bake:

Bake for 40–45 minutes, or until the topping is golden brown and the filling is bubbly. If the top browns too quickly, loosely tent with foil after 30 minutes.


6. Cool slightly & serve:

Let cool for about 10–15 minutes before serving. Best enjoyed warm with a scoop of vanilla ice cream or a dollop of whipped cream. 🍨


💡 Tips:

  • Add a pinch of nutmeg to the topping for extra warmth.

  • Sub half the blackberries with blueberries or raspberries for variety.

  • Want extra crunch? Sprinkle a little sugar on top before baking.
