Walking taco casserole

🌮 Walking Taco Casserole

Ingredients:

  • 1 lb ground beef (or ground turkey)

  • 1 packet taco seasoning

  • 1/2 cup water

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 can (10 oz) Rotel (diced tomatoes with green chilies), drained

  • 1 cup frozen corn (or canned/drained)

  • 2 cups shredded cheddar cheese

  • 4 cups Fritos (or any corn chips)

  • Optional toppings: sour cream, chopped lettuce, diced tomatoes, sliced jalapeños, green onions, salsa


Instructions:

  1. Preheat Oven to 350°F (175°C).

  2. Cook the Beef:

    • In a large skillet over medium heat, brown the ground beef until no longer pink.

    • Drain any excess grease.

    • Add taco seasoning and water; stir and simmer for 2–3 minutes.

  3. Mix the Filling:

    • Stir in black beans, Rotel, and corn.

    • Cook for another 2–3 minutes until heated through.

  4. Assemble the Casserole:

    • In a 9×13 baking dish, layer half the Fritos on the bottom.

    • Pour the meat mixture over the chips.

    • Sprinkle cheese evenly over the top.

  5. Bake:

    • Bake uncovered for 15–20 minutes, until the cheese is melted and bubbly.

  6. Finish with Toppings:

    • Remove from oven and sprinkle with remaining Fritos.

    • Add any fresh toppings you like — lettuce, tomato, sour cream, etc.
