Veggie Egg Bites

🧁 Veggie Egg Bites Recipe

📝 Ingredients:

  • 6 large eggs

  • 1/2 cup milk (or dairy-free alternative)

  • 1/2 cup shredded cheese (cheddar, feta, mozzarella, or your favorite)

  • 1/2 cup bell pepper, finely chopped

  • 1/4 cup spinach, chopped

  • 1/4 cup onion, finely diced

  • Salt & pepper to taste

  • Optional: garlic powder, chopped tomatoes, mushrooms, or cooked broccoli


🥄 Instructions:

  1. Preheat Oven to 350°F (175°C).

  2. Grease a Muffin Tin with nonstick spray or line with silicone baking cups.

  3. Sauté Vegetables (optional): For extra flavor, lightly sauté the onions, peppers, and spinach in a pan with a little olive oil until softened. Let cool slightly.

  4. Whisk Eggs & Milk in a bowl until fully combined. Stir in salt, pepper, and any other seasonings.

  5. Add Cheese & Veggies to the egg mixture. Mix gently.

  6. Pour Mixture evenly into the muffin cups (fill about 3/4 full).

  7. Bake for 18–22 minutes, or until the egg bites are set and slightly golden on top.

  8. Cool & Serve: Let them cool a few minutes before removing from the tin.
