Classic Vegetable Soup
Ingredients:

2 tablespoons olive oil

1 medium onion, chopped

2 cloves garlic, minced

2 carrots, peeled and sliced

2 celery stalks, sliced

1 medium potato, peeled and diced

1 zucchini, chopped

1 cup green beans, trimmed and cut into pieces

1 can (14.5 oz) diced tomatoes (with juice)

6 cups vegetable broth (or water + bouillon)

1 teaspoon dried thyme

1 teaspoon dried basil

Salt and pepper, to taste

Fresh parsley or basil, for garnish (optional)
Instructions:

Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sauté until softened and fragrant (about 3-4 minutes).

Add carrots, celery, and potato. Cook for another 5 minutes, stirring occasionally.

Pour in the vegetable broth and diced tomatoes with their juice.
