Here’s a delicious and easy Upside-Down Apple Cake recipe! It’s a comforting dessert with caramelized apples on top and a soft, spiced cake underneath.

🍎 Upside-Down Apple Cake

🔪 Ingredients:

For the apple topping:

  • 3 medium apples (e.g., Honeycrisp or Granny Smith), peeled, cored, and sliced thin

  • 1/2 cup (1 stick) unsalted butter

  • 2/3 cup light brown sugar, packed

  • 1/2 tsp ground cinnamon (optional)

For the cake batter:

  • 1 1/2 cups all-purpose flour

  • 1 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1 tsp ground cinnamon

  • 1/4 tsp ground nutmeg (optional)

  • 1/2 cup unsalted butter, softened

  • 3/4 cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 2/3 cup sour cream or plain yogurt

👩‍🍳 Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan or a square 8×8 pan. Line the bottom with parchment paper for easy removal.

  2. Make the topping:

    • In a saucepan over medium heat, melt 1/2 cup butter and add brown sugar.

    • Stir until the sugar dissolves and the mixture bubbles (2–3 minutes).

    • Pour this into the prepared pan and spread evenly.

    • Arrange the apple slices in a spiral or overlapping rows over the caramel.

  3. Make the cake batter:

    • In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

    • In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.

    • Add eggs one at a time, beating well after each.

    • Mix in vanilla.

    • Stir in half of the flour mixture, then the sour cream, then the remaining flour mixture. Don’t overmix.

  4. Assemble and bake:

    • Gently spread the batter over the apples.

    • Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.

  5. Cool and flip:

    • Let the cake cool in the pan for about 10–15 minutes.

    • Run a knife around the edge, then invert onto a plate. Carefully lift off the pan.

📝 Tips:

  • Serve warm with whipped cream, vanilla ice cream, or crème fraîche.

  • Try adding a pinch of cardamom or cloves to the batter for extra warmth.

  • Use pears or peaches instead of apples for a twist.
