Ultimate BBQ Meat Platter

This platter will include:

  • Smoked brisket

  • Pulled pork

  • BBQ ribs

  • Grilled sausages

  • BBQ chicken thighs

Plus, I’ll suggest some sides and sauces to elevate the experience.


Ultimate BBQ Meat Platter Recipe


1. Smoked Brisket

Ingredients:

  • 1 whole beef brisket (10-12 lbs), trimmed

  • 1/4 cup kosher salt

  • 1/4 cup coarse black pepper

  • 2 tbsp garlic powder

  • 2 tbsp onion powder

  • 1 tbsp smoked paprika

  • Wood chips: oak or hickory

Instructions:

  1. Prep rub: Mix salt, pepper, garlic powder, onion powder, and paprika.

  2. Apply rub: Generously coat brisket with the rub on all sides.

  3. Smoking: Preheat smoker to 225°F (107°C). Place brisket fat side up.

  4. Cook: Smoke for 10-14 hours until internal temp hits ~195-205°F (90-96°C). Wrap in butcher paper or foil after 6 hours to retain moisture (optional).

  5. Rest: Let brisket rest for 1 hour before slicing thinly against the grain.


2. Pulled Pork (Pork Shoulder / Boston Butt)

Ingredients:

  • 8 lb pork shoulder

  • 1/4 cup paprika

  • 2 tbsp brown sugar

  • 1 tbsp salt

  • 1 tbsp black pepper

  • 1 tbsp chili powder

  • 1 tbsp garlic powder

  • 1 tbsp onion powder

  • 1 tsp cayenne pepper (optional)

  • Apple cider vinegar or apple juice (for spritzing)

Instructions:

  1. Rub: Combine spices and rub all over the pork.

  2. Smoking: Preheat smoker to 225°F. Place pork fat side up.

  3. Cook: Smoke for 12-16 hours, until internal temp reaches 195-205°F.

  4. Spritz: Every hour after 3 hours, spritz with apple cider vinegar or juice.

  5. Pull: Let rest 30 mins, then shred with forks or meat claws.


3. BBQ Ribs (Baby Back or St. Louis Style)

Ingredients:

  • 2 racks pork ribs

  • 1/4 cup brown sugar

  • 1 tbsp paprika

  • 1 tbsp salt

  • 1 tbsp black pepper

  • 1 tbsp chili powder

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • Your favorite BBQ sauce

Instructions:

  1. Remove membrane: Peel off the silver skin from the bone side.

  2. Dry rub: Mix spices and rub evenly.

  3. Smoking: Smoke ribs at 225°F for 3 hours.

  4. Wrap: Wrap ribs tightly in foil with a splash of apple juice or butter, cook another 2 hours.

  5. Sauce and finish: Unwrap and sauce ribs, smoke another 1 hour unwrapped to set the sauce.


4. Grilled Sausages

Ingredients:

  • 8 sausages (bratwurst, Italian, or your favorite kind)

Instructions:

  1. Grill over medium heat (around 350°F) for about 15-20 minutes.

  2. Turn frequently for even cooking and char marks.

  3. Serve whole or sliced.


5. BBQ Chicken Thighs

Ingredients:

  • 8 bone-in, skin-on chicken thighs

  • 1/4 cup olive oil

  • 2 tbsp smoked paprika

  • 1 tbsp garlic powder

  • 1 tbsp onion powder

  • Salt and pepper to taste

Instructions:

  1. Toss chicken thighs with olive oil and seasonings.

  2. Grill over medium heat for 6-8 minutes per side until internal temp hits 165°F.

  3. Optional: brush with BBQ sauce in the last few minutes.


Suggested Sides & Sauces

  • Classic coleslaw

  • Pickles and onions

  • Cornbread or soft rolls

  • Baked beans

  • BBQ sauces: tangy vinegar, sweet molasses, spicy mustard


Plating & Serving

  • Slice brisket thin and fan out.

  • Pile pulled pork in a serving dish.

  • Arrange ribs, sausages, and chicken attractively.

  • Serve with sides and sauces for dipping.
