1 (20 oz) package cheese tortellini, refrigerated or frozen

1 cup cherry tomatoes, halved

1 cup cucumber, sliced and quartered

1/2 cup red onion, thinly sliced

1/2 cup black olives, sliced

1/2 cup salami or pepperoni, diced (optional)

1/2 cup mozzarella balls or cubed mozzarella

1/4 cup fresh basil, chopped (or parsley)

Cook Tortellini:
Bring a large pot of salted water to a boil. Cook the tortellini according to package instructions. Drain and rinse with cold water to stop cooking. Let cool. -
