Posted on May 17, 2025

That sounds like a flavorful and fresh combination! Here are a few ideas for what you can make with tomatoes, asparagus, garlic, and herbs:

1. Roasted Vegetable Medley

  • How: Toss cherry tomatoes, asparagus (cut into 2-inch pieces), minced garlic, olive oil, salt, pepper, and fresh herbs (like thyme or rosemary).

  • Cook: Roast at 425°F (220°C) for 15–20 minutes until caramelized and tender.

  • Serve: As a side dish, over pasta, or on toasted bread.

2. Tomato-Asparagus Pasta

  • How: Sauté garlic in olive oil, add chopped tomatoes, cook until soft. Blanch asparagus, then add to the pan. Toss with cooked pasta and fresh herbs (like basil or parsley).

  • Optional: Add a sprinkle of Parmesan or chili flakes.

3. Herby Tomato & Asparagus Salad

  • How: Steam or roast asparagus until just tender. Toss with fresh tomato slices or halved cherry tomatoes, minced garlic (or garlic-infused oil), and a vinaigrette with herbs like dill, basil, or oregano.

  • Serve cold or room temp as a refreshing salad.

4. Shakshuka-Inspired Skillet

  • How: Sauté garlic and herbs, add chopped tomatoes and cook into a thick sauce. Add lightly cooked asparagus. Crack eggs on top (optional) and cook covered until eggs are set.
