Servings: 10–12

Prep Time: 30 minutes

Cook Time: 25 minutes

Chill Time: 4 hours (or overnight)

Total Time: ~5 hours

🧁 Cake Ingredients

  • 2 ½ cups (315g) all-purpose flour

  • 2 ½ tsp baking powder

  • ½ tsp salt

  • ¾ cup (170g) unsalted butter, softened

  • 1 ¾ cups (350g) granulated sugar

  • 4 large eggs

  • 1 tsp vanilla extract

  • 1 cup (240ml) whole milk

  • ½ cup (120ml) strong brewed coffee or espresso, cooled

🍮 Espresso Syrup

  • ½ cup (120ml) hot espresso or strong coffee

  • 2 tbsp coffee liqueur (optional, e.g., Kahlúa)

  • 2 tbsp granulated sugar

🧁 Mascarpone Filling

  • 1 ½ cups (360ml) heavy cream, cold

  • 8 oz (225g) mascarpone cheese, room temperature

  • ½ cup (60g) powdered sugar

  • 1 tsp vanilla extract

🍫 Topping

  • Unsweetened cocoa powder (for dusting)

  • Chocolate shavings or curls (optional)

🥣 Instructions

1. Make the Cake Layers

  1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch (or 9-inch) round cake pans.

  2. In a medium bowl, whisk together flour, baking powder, and salt.

  3. In a large bowl, cream butter and sugar until light and fluffy.

  4. Beat in eggs one at a time, then add vanilla.

  5. Add flour mixture in 3 parts, alternating with milk and coffee. Mix until just combined.

  6. Divide batter between pans and smooth tops. Bake for 22–25 minutes, or until a toothpick comes out clean.

  7. Cool in pans for 10 minutes, then transfer to wire racks to cool completely.

2. Prepare Espresso Syrup

  1. In a small bowl, combine hot espresso, sugar, and liqueur (if using). Stir until sugar dissolves. Let cool.

3. Make the Mascarpone Filling

  1. In a large bowl, whip heavy cream until stiff peaks form.

  2. In another bowl, beat mascarpone, powdered sugar, and vanilla until smooth.

  3. Gently fold whipped cream into mascarpone mixture until combined.

4. Assemble the Cake

  1. Slice each cake layer in half horizontally to make 4 layers.

  2. Place one layer on a cake plate. Brush generously with espresso syrup.

  3. Spread ¼ of mascarpone filling over the layer.

  4. Repeat with remaining layers, brushing each with syrup and spreading filling.

  5. Finish with a smooth layer of mascarpone on top.

5. Chill & Finish

  1. Refrigerate cake for at least 4 hours or overnight for best flavor.

  2. Just before serving, dust the top with cocoa powder and sprinkle chocolate shavings if desired.

☕ Tips:

  • Use cold heavy cream for best whipping results.

  • You can make the cake a day in advance—it tastes even better after chilling.

  • For extra flavor, add a splash of rum or Kahlúa to the mascarpone filling.
