🥣 Instructions
1. Make the Cake Layers
-
Preheat oven to 350°F (175°C). Grease and flour two 8-inch (or 9-inch) round cake pans.
-
In a medium bowl, whisk together flour, baking powder, and salt.
-
In a large bowl, cream butter and sugar until light and fluffy.
-
Beat in eggs one at a time, then add vanilla.
-
Add flour mixture in 3 parts, alternating with milk and coffee. Mix until just combined.
-
Divide batter between pans and smooth tops. Bake for 22–25 minutes, or until a toothpick comes out clean.
-
Cool in pans for 10 minutes, then transfer to wire racks to cool completely.
2. Prepare Espresso Syrup
-
In a small bowl, combine hot espresso, sugar, and liqueur (if using). Stir until sugar dissolves. Let cool.
3. Make the Mascarpone Filling
-
In a large bowl, whip heavy cream until stiff peaks form.
-
In another bowl, beat mascarpone, powdered sugar, and vanilla until smooth.
-
Gently fold whipped cream into mascarpone mixture until combined.
4. Assemble the Cake
-
Slice each cake layer in half horizontally to make 4 layers.
-
Place one layer on a cake plate. Brush generously with espresso syrup.
-
Spread ¼ of mascarpone filling over the layer.
-
Repeat with remaining layers, brushing each with syrup and spreading filling.
-
Finish with a smooth layer of mascarpone on top.
5. Chill & Finish
-
Refrigerate cake for at least 4 hours or overnight for best flavor.
-
Just before serving, dust the top with cocoa powder and sprinkle chocolate shavings if desired.
☕ Tips:
-
Use cold heavy cream for best whipping results.
-
You can make the cake a day in advance—it tastes even better after chilling.
-
For extra flavor, add a splash of rum or Kahlúa to the mascarpone filling.
