Tiramisu

Ingredients:

  • 6 large egg yolks

  • 3/4 cup granulated sugar

  • 1 cup mascarpone cheese (room temperature)

  • 1 1/2 cups heavy cream

  • 2 cups strong brewed coffee (cooled)

  • 1 package of ladyfinger cookies (savoiardi)

  • Unsweetened cocoa powder (for dusting)

  • Dark chocolate shavings (optional)

Instructions:

  1. Prepare the Cream Mixture:

    • In a mixing bowl, whisk the egg yolks and sugar together until thick and pale.

    • Add the mascarpone cheese to the egg mixture and beat until smooth.

    • In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until fully incorporated.

  2. Prepare the Coffee Mixture:

    • Pour the cooled coffee into a shallow dish.

  3. Assemble the Tiramisu:

    • Quickly dip each ladyfinger into the coffee, making sure they are soaked but not soggy.

    • Arrange a layer of soaked ladyfingers at the bottom of a dish (such as an 8×8 square pan).

    • Spread half of the mascarpone mixture on top of the ladyfingers.

    • Repeat the layers with the remaining ladyfingers and mascarpone mixture.

  4. Chill:

    • Cover the dish with plastic wrap and refrigerate for at least 4 hours (or overnight) to allow the flavors to develop.

  5. Serve:

    • Just before serving, dust the top with unsweetened cocoa powder and garnish with chocolate shavings if desired.
