The trick to making delicious crispy fries without a drop of oil

Posted on May 16, 2025

Making crispy fries without using any oil is totally doable, and it’s all about technique! Here’s a simple trick to get that perfect crispy texture:

Ingredients:

  • Potatoes (Russet potatoes work best)

  • Salt

  • Water

  • Optional: seasonings like garlic powder, paprika, or black pepper

Instructions:

  1. Choose the right potatoes: Use starchy potatoes like Russets because they have less moisture and become crispier when cooked.

  2. Cut your fries evenly: Slice the potatoes into thin, even strips. The thinner the fries, the crispier they’ll get.

  3. Soak in water: Soak the potato strips in water for at least 30 minutes, or ideally for an hour. This removes excess starch, which helps achieve that crispy texture.

  4. Dry thoroughly: After soaking, pat the potatoes dry with a towel. The drier they are, the crisper they’ll get when baking.

  5. Preheat your oven: Set the oven to 400°F (200°C).

  6. Use a baking sheet: Line a baking sheet with parchment paper or use a silicone mat. Spread the fries out in a single layer, ensuring they aren’t touching each other (this helps them crisp up).

  7. Use a high-heat method: To mimic the crisping effect of oil, bake the fries at a high temperature (around 400°F or 200°C) for the best texture.

  8. Flip halfway through: Bake for 20-25 minutes, flipping the fries halfway through to ensure they crisp evenly.

  9. Optional: Season after baking: Once the fries are golden and crispy, season them with salt and your favorite seasonings immediately while they’re still hot.
