Teriyaki Chicken with Pineapple

Ingredients:

  • For the Chicken:

    • 4 boneless, skinless chicken breasts or thighs

    • Salt and pepper, to taste

    • 1 tablespoon olive oil or vegetable oil

  • For the Teriyaki Sauce:

    • ½ cup soy sauce

    • ¼ cup brown sugar (or honey for a more natural sweetness)

    • 2 tablespoons rice vinegar

    • 2 tablespoons sesame oil

    • 1 tablespoon grated fresh ginger

    • 2 garlic cloves, minced

    • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

  • For the Pineapple:

    • 1 fresh pineapple, peeled, cored, and cut into chunks (or 1 can of pineapple chunks in juice, drained)

  • Optional Garnishes:

    • Sliced green onions

    • Sesame seeds

    • Fresh cilantro

Instructions:

  1. Make the Teriyaki Sauce:

    • In a small saucepan, combine soy sauce, brown sugar, rice vinegar, sesame oil, ginger, and garlic.

    • Bring the mixture to a simmer over medium heat, stirring occasionally until the sugar dissolves.

    • Once simmering, add the cornstarch-water mixture to thicken the sauce. Stir well and simmer for an additional 2-3 minutes. Remove from heat and set aside.

  2. Cook the Chicken:

    • Season the chicken breasts with salt and pepper on both sides.

    • Heat olive oil in a large pan or skillet over medium-high heat.

    • Cook the chicken for 6-7 minutes on each side, or until golden and cooked through (internal temperature should be 165°F or 75°C). Remove from the pan and set aside.

  3. Cook the Pineapple:

    • In the same pan, add the pineapple chunks and cook for about 2-3 minutes, until they get a little caramelized and golden brown. You can also grill the pineapple for extra flavor if you have a grill or grill pan.

  4. Combine:

    • Slice the cooked chicken into strips or serve whole, and drizzle the teriyaki sauce over it.

    • Add the caramelized pineapple on top or alongside.

  5. Garnish (Optional):

    • Top with sliced green onions, sesame seeds, or fresh cilantro for extra flavor and a burst of color.

Serving Suggestions:

  • Serve over steamed rice or quinoa for a full meal.

  • Add some sautéed vegetables like bell peppers, broccoli, or snap peas to make it even more vibrant.
