Here’s a  recipe for Teriyaki Beef & Pineapple Rice Stack — a delicious and impressive dish that layers savory teriyaki beef, sweet pineapple, and fluffy rice. It’s great for dinner or entertaining guests.


Teriyaki Beef & Pineapple Rice Stack

Ingredients:

For the Teriyaki Beef:

  • 1 lb (450g) beef sirloin or flank steak, thinly sliced

  • 1/4 cup soy sauce

  • 2 tbsp mirin (or substitute with dry sherry or white wine)

  • 2 tbsp brown sugar or honey

  • 1 tbsp rice vinegar

  • 2 cloves garlic, minced

  • 1 tsp ginger, minced or grated

  • 1 tbsp sesame oil

  • 1 tbsp vegetable oil (for cooking)

For the Pineapple:

  • 1 cup fresh pineapple chunks (or canned, drained)

  • 1 tbsp butter

  • 1 tbsp brown sugar

For the Rice:

  • 2 cups cooked jasmine rice (or any long grain white rice)

  • 1 tsp toasted sesame seeds (optional)

  • 2 green onions, thinly sliced (optional)

For Garnish (optional):

  • Fresh cilantro leaves

  • Sliced green onions

  • Sesame seeds

  • Lime wedges


Instructions:

1. Prepare the Teriyaki Sauce:

  • In a bowl, whisk together soy sauce, mirin, brown sugar, rice vinegar, garlic, ginger, and sesame oil until sugar dissolves.

  • Set aside.

2. Cook the Beef:

  • Heat vegetable oil in a large skillet or wok over medium-high heat.

  • Add the thinly sliced beef and stir-fry until browned but still tender, about 3-5 minutes.

  • Pour in the teriyaki sauce and cook for another 2-3 minutes, stirring frequently, until the sauce thickens slightly and coats the beef.

  • Remove from heat and set aside.

3. Caramelize the Pineapple:

  • In a separate skillet, melt butter over medium heat.

  • Add pineapple chunks and sprinkle brown sugar on top.

  • Cook for about 5-7 minutes, stirring occasionally, until the pineapple caramelizes and becomes golden brown.

  • Remove from heat.

4. Prepare the Rice:

  • Make sure your cooked rice is warm and fluffy.

  • Optionally, stir in toasted sesame seeds and sliced green onions for extra flavor.

5. Assemble the Rice Stacks:

  • Use a ring mold or a clean round bowl to layer the stack.

  • Start with a layer of rice pressed down firmly.

  • Add a layer of caramelized pineapple.

  • Top with a layer of teriyaki beef.

  • Repeat if desired for a taller stack.

  • Carefully remove the ring mold to reveal a neat stack.

6. Garnish and Serve:

  • Garnish with fresh cilantro, more sesame seeds, sliced green onions, and lime wedges.

  • Serve immediately.


Tips:

  • You can add sautéed vegetables like bell peppers or snap peas for extra color and nutrition.

  • For a vegetarian twist, swap beef for tofu or mushrooms.

  • Make sure your rice is sticky enough to hold the shape when pressed in the mold.
