Here’s a delicious recipe for Sweet Potato Rocambole with Minced Meat, a rolled dish that’s hearty, flavorful, and perfect for a comforting meal.


🥔 Sweet Potato Rocambole with Minced Meat

🧾 Ingredients

For the sweet potato dough:

  • 3 large sweet potatoes, peeled and boiled

  • 2 tbsp butter

  • 1/4 cup grated Parmesan cheese (optional)

  • Salt and pepper to taste

  • 1 egg (for binding)

  • 2–3 tbsp flour or cornstarch (as needed for consistency)

For the minced meat filling:

  • 1 tbsp olive oil

  • 1 small onion, finely chopped

  • 2 garlic cloves, minced

  • 400g (14 oz) ground beef (or chicken/turkey)

  • 1/2 cup tomato sauce or diced tomatoes

  • 1/4 cup green olives, chopped (optional)

  • 1/2 tsp paprika

  • Salt and pepper to taste

  • Fresh parsley, chopped (for garnish)

Optional toppings:

  • Grated cheese for melting on top

  • More tomato sauce for serving


👨‍🍳 Instructions

1. Prepare the sweet potato dough:

  1. Mash the boiled sweet potatoes in a large bowl until smooth.

  2. Mix in the butter, Parmesan (if using), salt, pepper, and egg.

  3. Add flour or cornstarch gradually until the mixture holds together like a soft dough. It should be pliable but not sticky.

2. Cook the meat filling:

  1. In a skillet, heat olive oil over medium heat.

  2. Sauté the onion and garlic until translucent.

  3. Add the ground meat and cook until browned.

  4. Stir in tomato sauce, olives, paprika, salt, and pepper.

  5. Simmer for 5–10 minutes until slightly thickened. Set aside to cool slightly.

3. Assemble the rocambole:

  1. On a sheet of parchment paper, spread the sweet potato dough into a rectangle about 1–1.5 cm (½ inch) thick.

  2. Spread the meat filling evenly over the dough, leaving a small border.

  3. Using the parchment to help, gently roll the dough like a jelly roll (rocambole).

  4. Carefully transfer the roll onto a baking tray. Seam side down.

4. Bake:

  1. Preheat the oven to 180°C (350°F).

  2. Optionally top with cheese or brush with a little butter.

  3. Bake for 25–30 minutes, or until golden on top and set.


🍽️ Serving Suggestions

  • Serve warm with a green salad or steamed veggies.

  • Drizzle with more tomato sauce if desired.
