Here’s a delicious and easy Sweet Potato Pie Bars recipe — like sweet potato pie, but in a portable, shareable form!


🥧 Sweet Potato Pie Bars Recipe

📋 Ingredients

For the crust:
  • 1 1/2 cups graham cracker crumbs (or crushed gingersnaps for extra spice)

  • 1/4 cup granulated sugar

  • 1/2 cup (1 stick) unsalted butter, melted

  • 1/4 tsp salt

For the sweet potato filling:
  • 2 cups mashed cooked sweet potatoes (about 2 large sweet potatoes)

  • 3/4 cup brown sugar (light or dark)

  • 2 large eggs

  • 1/2 cup evaporated milk (or heavy cream)

  • 1 tsp vanilla extract

  • 1 tsp cinnamon

  • 1/2 tsp ground nutmeg

  • 1/2 tsp ground ginger

  • Pinch of salt

Optional topping:
  • Whipped cream

  • Chopped pecans or toasted marshmallows


🔧 Instructions

1. Preheat oven:

  • To 350°F (175°C). Line a 9×9-inch baking pan with parchment paper or foil, leaving an overhang for easy removal.

2. Make the crust:

  • In a medium bowl, mix graham cracker crumbs, sugar, salt, and melted butter.

  • Press the mixture firmly into the bottom of the prepared pan.

  • Bake for 8-10 minutes. Remove and set aside.

3. Prepare the filling:

  • In a large bowl, whisk together mashed sweet potatoes, brown sugar, eggs, milk, vanilla, and spices until smooth.

  • Pour over the baked crust.

4. Bake:

  • Bake for 35–40 minutes, or until the center is set and doesn’t jiggle when you shake the pan gently.

5. Cool and chill:

  • Cool completely at room temperature, then refrigerate for at least 2 hours before slicing.

6. Serve:

  • Cut into bars. Top with whipped cream and pecans or marshmallows if desired.
