Super Easy Rice Cake

Here’s a super easy recipe for a Rice Cake (or a Milk Custard Cake-style version) that blends the soft, chewy texture of traditional rice cakes with the creamy richness of milk custard. It’s great as a snack or dessert and doesn’t require fancy ingredients.


🌾 Super Easy Rice Cake / Milk Custard Cake

🍰 Ingredients:

  • 1 cup glutinous rice flour (also called sweet rice flour)

  • 1/2 cup sugar (adjust to taste)

  • 1 cup milk (whole milk for creamier texture; can use coconut milk too)

  • 1 egg (optional for custard-like version)

  • 1/2 tsp vanilla extract

  • 1 tbsp melted butter or neutral oil

  • A pinch of salt

  • Optional toppings: sesame seeds, shredded coconut, or fruit


🥣 Instructions:

  1. Preheat oven to 350°F (175°C). Grease a small baking dish (like an 8×8 pan or loaf pan).

  2. In a mixing bowl, whisk together:

    • 1 cup glutinous rice flour

    • 1/2 cup sugar

    • Pinch of salt

  3. In a separate bowl, mix wet ingredients:

    • 1 cup milk

    • 1 egg (if using, for a custard texture)

    • 1 tbsp melted butter

    • 1/2 tsp vanilla extract

  4. Combine the wet and dry ingredients. Whisk until smooth and no lumps remain.

  5. Pour the batter into the greased baking dish. Optional: sprinkle sesame seeds or coconut on top.

  6. Bake for 30–40 minutes, or until the top is golden and a toothpick inserted comes out clean. It should be lightly springy and soft.

  7. Let cool slightly before slicing. Serve warm or chilled.


🔄 Variations:

  • Use coconut milk instead of regular milk for a tropical flavor.

  • Add mashed banana or a bit of cream cheese for a twist.

  • Make mini versions in a muffin tin!
