Super Creamy Apple Pie Cake Recipe

Ingredients:

For the Cake:

  • 2 cups all-purpose flour

  • 1 ½ tsp baking powder

  • ½ tsp baking soda

  • 1 tsp ground cinnamon

  • ½ tsp ground nutmeg

  • ¼ tsp salt

  • ½ cup unsalted butter, softened

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1 cup sour cream or plain Greek yogurt

  • 2 medium apples, peeled, cored, and finely chopped (like Granny Smith or Honeycrisp)

For the Creamy Topping:

  • 8 oz cream cheese, softened

  • ½ cup powdered sugar

  • 1 tsp vanilla extract

  • ½ cup heavy cream, whipped to soft peaks

Optional Topping:

  • Cinnamon sugar or chopped nuts for sprinkling


Instructions:

  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C). Grease and flour a 9×9-inch baking pan or line it with parchment paper.

  2. Prepare the Cake Batter:
    In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.

  3. Cream Butter and Sugar:
    In a large bowl, beat the softened butter and sugar together until light and fluffy, about 3-4 minutes.

  4. Add Eggs and Vanilla:
    Beat in the eggs one at a time, then stir in the vanilla.

  5. Add Dry Ingredients and Sour Cream:
    Alternately add the flour mixture and sour cream (or Greek yogurt) to the butter mixture, beginning and ending with the flour mixture. Stir just until combined.

  6. Fold in Apples:
    Gently fold in the chopped apples.

  7. Bake:
    Pour the batter into the prepared pan and bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely.

  8. Make the Creamy Topping:
    In a medium bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla, beating until combined. Gently fold in the whipped heavy cream.

  9. Top the Cake:
    Spread the creamy topping evenly over the cooled cake. Sprinkle with cinnamon sugar or chopped nuts if desired.

  10. Chill & Serve:
    Chill the cake in the fridge for at least 1 hour before serving for the best creamy texture.
