Here’s a Strawberry Tres Leches Cake recipe that’s rich, moist, and bursting with strawberry flavor. It combines the classic tres leches base with sweet strawberries and whipped cream for a crowd-pleasing dessert.


🍓 Strawberry Tres Leches Cake

Ingredients

For the Cake:
  • 1 cup all-purpose flour

  • 1 1/2 tsp baking powder

  • 1/4 tsp salt

  • 5 large eggs, separated

  • 1 cup granulated sugar, divided (3/4 cup + 1/4 cup)

  • 1/3 cup whole milk

  • 1 tsp vanilla extract

For the Milk Mixture:
  • 1 can (12 oz) evaporated milk

  • 1 can (14 oz) sweetened condensed milk

  • 1/2 cup heavy cream

  • 1/2 cup strawberry puree (see below)

For the Strawberry Puree:
  • 1 1/2 cups fresh strawberries, hulled

  • 2–3 tbsp sugar (to taste)

  • 1 tsp lemon juice

For the Topping:
  • 1 1/2 cups heavy whipping cream

  • 3 tbsp powdered sugar

  • 1 tsp vanilla extract

  • Fresh strawberries, sliced (for garnish)


🧁 Instructions

1. Make the Cake:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.

  2. In a bowl, whisk flour, baking powder, and salt.

  3. In a separate large bowl, beat egg yolks and 3/4 cup sugar until pale and thick. Stir in milk and vanilla.

  4. Fold in the flour mixture gently.

  5. In another bowl, beat egg whites to soft peaks. Gradually add remaining 1/4 cup sugar and beat to stiff peaks.

  6. Gently fold egg whites into the batter. Pour into pan and smooth the top.

  7. Bake for 25–30 minutes, or until a toothpick comes out clean. Let cool completely.

2. Prepare the Strawberry Puree:

  1. Blend strawberries, sugar, and lemon juice until smooth.

  2. Strain if desired (for a smoother texture).

  3. Set aside 1/2 cup for the milk soak.

3. Make the Milk Mixture:

  1. Whisk together evaporated milk, sweetened condensed milk, heavy cream, and the 1/2 cup strawberry puree.

4. Soak the Cake:

  1. Poke holes all over the cooled cake with a fork or skewer.

  2. Slowly pour the strawberry milk mixture evenly over the cake.

  3. Cover and refrigerate for at least 4 hours (preferably overnight) to soak.

5. Make the Whipped Cream Topping:

  1. Beat heavy cream, powdered sugar, and vanilla until stiff peaks form.

  2. Spread over the soaked cake.

6. Decorate:

  • Top with sliced strawberries and optional strawberry drizzle.
