Here’s a simple and delicious Strawberry Crunch Cheesecake Bites recipe that makes approximately 8 bites:


🍓 Strawberry Crunch Cheesecake Bites

🧁 Ingredients

For the Crust:

  • 1/2 cup crushed Golden Oreos (about 6–7 cookies)

  • 2 tbsp unsalted butter, melted

For the Cheesecake Filling:

  • 8 oz cream cheese, softened

  • 1/4 cup granulated sugar

  • 1/2 tsp vanilla extract

  • 1/4 cup sour cream (or Greek yogurt)

  • 1 egg

For the Strawberry Crunch Topping:

  • 1/2 cup freeze-dried strawberries

  • 1/2 cup Golden Oreos

  • 2 tbsp unsalted butter, melted


🔪 Instructions

1. Prep & Crust

  • Preheat oven to 325°F (163°C).

  • Line a muffin tin with 8 liners.

  • Mix crushed Golden Oreos and melted butter.

  • Press about 1 tablespoon of crust mixture into each liner.

  • Bake crusts for 5 minutes, then set aside to cool.

2. Make Cheesecake Filling

  • Beat cream cheese and sugar until smooth and creamy.

  • Add vanilla, sour cream, and egg, mixing until fully combined.

  • Spoon filling over the crusts, filling each liner nearly full.

3. Bake Cheesecakes

  • Bake at 325°F for 16–18 minutes, or until the centers are just set.

  • Let cool in the pan for 15 minutes, then transfer to the fridge to chill for at least 2 hours.

4. Strawberry Crunch Topping

  • Pulse freeze-dried strawberries and Golden Oreos in a food processor until crumbly.

  • Stir in melted butter until combined.

5. Assemble

  • Once cheesecake bites are fully chilled, remove from liners.

  • Press or sprinkle strawberry crunch topping over each bite.

  • Optionally, drizzle with white chocolate for extra flair.


🧊 Storage

Keep refrigerated in an airtight container for up to 4–5 days or freeze for longer storage.
