For the Cake:
  • 2 ½ cups all-purpose flour

  • 2 ½ tsp baking powder

  • ½ tsp salt

  • 1 cup (2 sticks) unsalted butter, softened

  • 1 ¾ cups granulated sugar

  • 4 large eggs

  • 1 tbsp pure vanilla extract

  • 1 cup whole milk (room temperature)

  • ½ cup sour cream or Greek yogurt (adds moisture)

  • ¾ cup finely chopped fresh strawberries (or strawberry puree – optional for extra flavor)

For the Strawberry Cream Cheese Frosting:
  • 8 oz (1 block) cream cheese, softened

  • ½ cup (1 stick) unsalted butter, softened

  • 2–2.5 cups powdered sugar (adjust for sweetness and consistency)

  • ½ tsp vanilla extract

  • ¼ cup strawberry puree (or 3–4 tbsp strawberry jam)

  • Pinch of salt

Optional Filling/Toppings:
  • Fresh sliced strawberries

  • Strawberry preserves or jam

  • Whipped cream

  • White chocolate shavings (optional)

Step 1: Prepare the Cake

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch or 9-inch round cake pans.

  2. Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, and salt.

  3. Cream Butter & Sugar: In a large bowl, beat butter and sugar together until light and fluffy (about 3–4 minutes).

  4. Add Eggs & Vanilla: Beat in the eggs one at a time, then mix in vanilla extract.

  5. Add Sour Cream: Mix in the sour cream (or Greek yogurt).

  6. Alternate Flour & Milk: Gradually add the dry ingredients and milk, starting and ending with the flour mixture. Don’t overmix.

  7. Fold in Strawberries (Optional): Gently fold in the finely chopped strawberries or puree.

  8. Bake: Divide batter evenly into pans and bake for 25–30 minutes or until a toothpick comes out clean.

  9. Cool Completely: Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely before frosting.

Step 2: Make the Frosting

  1. Cream Butter & Cream Cheese: Beat together butter and cream cheese until smooth and fluffy (2–3 minutes).

  2. Add Flavorings: Mix in vanilla extract and strawberry puree or jam.

  3. Add Powdered Sugar: Gradually add powdered sugar, beating until smooth and desired consistency is reached.

  4. Chill if Needed: If the frosting is too soft, refrigerate for 15–20 minutes before frosting the cake.

Step 3: Assemble the Cake

  1. Level the Cakes: If needed, level the tops of your cake layers with a serrated knife.

  2. Fill the Layers: Place one cake layer on a serving plate. Spread a layer of frosting and optional strawberry jam and fresh strawberry slices.

  3. Top and Frost: Add the second cake layer and frost the top and sides of the cake.

  4. Decorate: Garnish with fresh strawberries, piped whipped cream, or white chocolate if desired.
