🧾 Ingredients

For the Banana Bread:

  • 2 large ripe bananas, mashed (about 1 cup)

  • 1/3 cup unsalted butter, melted

  • 1/2 cup granulated sugar

  • 1/4 cup light brown sugar (packed)

  • 1 large egg

  • 1 tsp vanilla extract

  • 1/4 cup sour cream or Greek yogurt

  • 1 1/2 cups all-purpose flour

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 1 cup chopped fresh strawberries (tossed in 1 tsp flour to prevent sinking)

For the Cream Cheese Filling:

  • 8 oz (1 block) cream cheese, softened

  • 1/4 cup granulated sugar

  • 1 large egg

  • 2 tbsp all-purpose flour

  • 1/2 tsp vanilla extract


🥣 Instructions

🔹 Step 1: Prepare the Pan & Oven

  1. Preheat your oven to 350°F (175°C).

  2. Grease a 9×5-inch loaf pan and line it with parchment paper for easy removal.


🔹 Step 2: Make the Cream Cheese Filling

In a medium bowl, beat together:

  • 8 oz cream cheese

  • 1/4 cup granulated sugar

  • 1 egg

  • 2 tbsp flour

  • 1/2 tsp vanilla

Whisk or beat until smooth and creamy. Set aside.


🔹 Step 3: Make the Banana Bread Batter

  1. In a large bowl, mash the bananas.

  2. Stir in melted butter, granulated sugar, brown sugar, egg, vanilla, and sour cream.

  3. In a separate bowl, whisk together flour, baking soda, and salt.

  4. Gently fold dry ingredients into wet ingredients — do not overmix.

  5. Gently fold in the flour-tossed strawberries.


🔹 Step 4: Assemble the Loaf

  1. Pour half the banana bread batter into the prepared pan.

  2. Spread the cream cheese filling evenly over the batter.

  3. Pour the remaining banana bread batter over the top and smooth it out.


🔹 Step 5: Bake

  • Bake at 350°F (175°C) for 60 to 70 minutes, or until a toothpick inserted into the banana bread (not the cream cheese) comes out clean.

  • If the top browns too quickly, tent loosely with foil around the 40-minute mark.

  • Let the bread cool in the pan for 15–20 minutes, then transfer to a wire rack to cool completely.

  • Slice only when fully cooled to allow the cream cheese layer to set.
