SPINACH & RICOTTA LASAGNA ROLLS

Here’s a delicious Spinach & Ricotta Lasagna Rolls recipe — easy to make and great for meal prep or feeding a crowd.


🧀 Spinach & Ricotta Lasagna Rolls

🕒 Total Time: ~1 hour

Servings: 4–6
Makes: 10–12 rolls


🌿 Ingredients:

For the Filling:

  • 1 tablespoon olive oil

  • 2 cloves garlic, minced

  • 5 oz (about 2 cups) fresh spinach (or use 10 oz frozen, thawed and squeezed dry)

  • 15 oz ricotta cheese

  • 1 cup shredded mozzarella cheese

  • ¼ cup grated Parmesan cheese

  • 1 egg

  • Salt & pepper to taste

  • Optional: pinch of nutmeg

For the Rolls:

  • 10–12 lasagna noodles (regular or oven-ready, cooked if needed)

  • 2 cups marinara sauce (store-bought or homemade)

  • Extra mozzarella & Parmesan for topping


🔪 Instructions:

1. Cook the Lasagna Noodles

  • Bring a large pot of salted water to a boil.

  • Cook noodles according to package instructions until al dente.

  • Drain and lay flat on a baking sheet lined with parchment paper to prevent sticking.

2. Make the Filling

  • Heat olive oil in a skillet over medium heat. Sauté garlic for 30 seconds, then add spinach and cook until wilted. Let cool slightly.

  • In a large bowl, mix ricotta, mozzarella, Parmesan, egg, cooked spinach, salt, pepper, and optional nutmeg until smooth and well combined.

3. Assemble the Rolls

  • Preheat oven to 375°F (190°C).

  • Spread about 1 cup of marinara sauce on the bottom of a 9×13 baking dish.

  • Spread 2–3 tablespoons of filling onto each lasagna noodle, then roll tightly from one end to the other.

  • Place seam-side down in the baking dish.

4. Top & Bake

  • Spoon remaining marinara sauce over the rolls.

  • Sprinkle with additional mozzarella and Parmesan.

  • Cover with foil and bake for 25 minutes. Uncover and bake an additional 10 minutes until bubbly and lightly browned.

5. Serve

  • Garnish with fresh basil or parsley if desired.

  • Let rest 5–10 minutes before serving.


📝 Tips:

  • Make ahead: Assemble up to 24 hours ahead and refrigerate before baking.

  • Freeze: Freeze individually before baking for quick meals.

  • Add-ins: Try adding sautéed mushrooms, zucchini, or crumbled cooked sausage for variations.
