Ingredients:

1 (14.75 oz) can pink salmon (with bones and skin, or boneless if preferred)

1 large egg

1/4 cup finely chopped onion

1/4 cup finely chopped green bell pepper (optional)

1/2 cup cornmeal

1/4 cup all-purpose flour

1 tsp hot sauce (like Crystal or Tabasco)

1 tsp Old Bay seasoning (or Cajun seasoning)

Salt and black pepper, to taste

1–2 Tbsp mayonnaise (optional for extra moisture)

Vegetable oil for frying
Instructions:

Prep the salmon:

Open the can and drain the salmon. Gently remove large bones if desired (they’re edible and soften when cooked).

Flake the salmon with a fork in a mixing bowl.

Mix the patties:

Add the egg, chopped onion, bell pepper (if using), cornmeal, flour, hot sauce, seasoning, and a bit of salt and pepper.

Mix until just combined. If it seems too dry, add a spoonful of mayo or a splash of milk.
