Here’s a flavorful and comforting Southern Cheddar Jalapeño Cornbread Bake recipe that’s perfect for potlucks, BBQs, or hearty dinners:


🌽 Southern Cheddar Jalapeño Cornbread Bake

🧺 Ingredients:

Dry Ingredients:

  • 1 cup yellow cornmeal

  • 1 cup all-purpose flour

  • 1 tbsp granulated sugar (optional)

  • 1 tbsp baking powder

  • ½ tsp baking soda

  • 1 tsp salt

Wet Ingredients:

  • 1 cup buttermilk

  • 2 large eggs

  • ½ cup (1 stick) unsalted butter, melted and slightly cooled

Add-ins:

  • 1½ cups sharp cheddar cheese, shredded

  • 1–2 fresh jalapeños, finely chopped (seeds removed for less heat)

  • 1 cup corn kernels (fresh, canned, or frozen and thawed)

  • Optional: ½ cup chopped scallions or green onions


🔪 Instructions:

  1. Preheat oven to 400°F (200°C). Grease a 9×9 inch baking dish or cast-iron skillet.

  2. Mix dry ingredients: In a large bowl, whisk together the cornmeal, flour, sugar (if using), baking powder, baking soda, and salt.

  3. Mix wet ingredients: In a separate bowl, whisk the buttermilk, eggs, and melted butter until well combined.

  4. Combine wet and dry: Pour the wet ingredients into the dry and stir until just combined — do not overmix.

  5. Fold in add-ins: Gently fold in the shredded cheddar, chopped jalapeños, corn, and scallions (if using).

  6. Pour into pan: Transfer the batter into your prepared dish and smooth the top. Optional: Sprinkle extra cheese or jalapeño slices on top for presentation.

  7. Bake for 25–30 minutes, or until golden brown and a toothpick inserted in the center comes out clean.

  8. Cool slightly before slicing and serving warm.

  • Use pickled jalapeños for tangier flavor.

  • Add crumbled bacon for a smoky twist.

  • Serve with chili, BBQ pulled pork, or a dollop of sour cream.
