🍰 Soft Fluffy Butter Cake Recipe

πŸ“Œ Ingredients:

(For one 8-inch round cake or loaf)

  • Cake Flour – 170g (1β…“ cups), sifted

  • Baking Powder – 1Β½ tsp

  • Salt – ΒΌ tsp

  • Unsalted Butter – 150g (β…” cup), softened

  • Granulated Sugar – 150g (ΒΎ cup)

  • Eggs – 3 large, room temperature

  • Whole Milk – 60ml (ΒΌ cup), room temperature

  • Heavy Cream or Sour Cream – 60ml (ΒΌ cup), room temperature

  • Vanilla Extract – 2 tsp

  • (Optional: Β½ tsp almond extract for extra flavor)


🧁 Instructions:

  1. Preheat oven to 170Β°C (340Β°F).
    Grease and line an 8-inch round pan or loaf tin with parchment paper.

  2. Sift dry ingredients:
    In a bowl, sift together cake flour, baking powder, and salt. Set aside.

  3. Cream butter and sugar:
    In a large mixing bowl, beat softened butter and sugar using a hand or stand mixer until light and fluffy (about 3–5 minutes).

  4. Add eggs:
    Add eggs one at a time, beating well after each. Scrape down the sides of the bowl.

  5. Mix in vanilla and cream:
    Add the vanilla extract and sour cream (or heavy cream). Mix until smooth.

  6. Alternate flour and milk:
    Add the dry ingredients in 3 parts, alternating with the milk in 2 parts (starting and ending with flour). Mix on low speed until just combined. Do not overmix.

  7. Pour into pan and smooth top.

  8. Bake for 35–45 minutes, or until a skewer inserted into the center comes out clean. The top should be golden and spring back when gently touched.

  9. Cool: Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
