Snowball Cookies

Here’s a classic Snowball Cookies recipe for you! These are also called Russian Tea Cakes or Mexican Wedding Cookies—delicious little buttery, nutty, powdered sugar-coated treats.


Snowball Cookies Recipe

Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened

  • 1/2 cup powdered sugar (plus extra for rolling)

  • 1 teaspoon vanilla extract

  • 2 1/4 cups all-purpose flour

  • 1/4 teaspoon salt

  • 3/4 cup finely chopped nuts (walnuts, pecans, or almonds work great)


Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a large bowl, cream the softened butter and 1/2 cup powdered sugar until light and fluffy.

  3. Mix in the vanilla extract.

  4. In a separate bowl, whisk together the flour and salt.

  5. Gradually add the flour mixture to the butter mixture, mixing until just combined.

  6. Stir in the chopped nuts.

  7. Roll dough into 1-inch balls and place them about 2 inches apart on the baking sheet.

  8. Bake for 12-15 minutes, or until the edges are lightly golden (cookies will look slightly underbaked but firm).

  9. Remove from oven and let cool for about 5 minutes.

  10. While still warm, roll the cookies in powdered sugar. Let cool completely, then roll them in powdered sugar again for a nice coating.
