Salt and black pepper (to taste)
-
1 tsp garlic powder
-
1 tsp onion powder
-
½ tsp paprika

¼ cup all-purpose flour (for dredging)

2 tbsp vegetable oil or butter (for frying)
For the onion gravy:
-
2 large yellow onions, thinly sliced
-
2 tbsp butter
-
2 tbsp all-purpose flour
-
2 cups low-sodium chicken broth (or beef broth for a richer flavor)
-
1 tsp Worcestershire sauce
-
Salt and pepper to taste
-
Optional: 1 tsp fresh thyme or ½ tsp dried thyme
Instructions:
1. Season & Dredge the Pork Chops
-
Pat pork chops dry with paper towels.
-
In a small bowl, mix salt, pepper, garlic powder, onion powder, and paprika.
-
Season both sides of the chops generously.
-
Dredge each pork chop lightly in flour, shaking off excess.
2. Sear the Pork Chops
-
Heat oil or butter in a large skillet (preferably cast iron) over medium-high heat.
-
Sear pork chops for about 3–4 minutes per side until golden brown. (They don’t need to cook through yet.)
-
Remove pork chops and set aside.
3. Make the Onion Gravy
-
In the same skillet, add 2 tbsp butter.
-
Add sliced onions and cook over medium heat for about 10–15 minutes until soft and caramelized, stirring occasionally.
-
Stir in 2 tbsp flour and cook for 1–2 minutes to form a roux.
-
Gradually whisk in broth, scraping up any browned bits from the pan.
-
Add Worcestershire sauce, thyme (if using), and season with salt and pepper.
-
Simmer until slightly thickened (3–5 minutes).
4. Simmer the Chops
-
Return pork chops to the skillet, nestling them into the gravy.
-
Reduce heat to low, cover, and simmer for 20–25 minutes, or until pork chops are tender and cooked through (internal temp 145°F / 63°C).
5. Serve
-
Serve hot over mashed potatoes, rice, or buttery grits.
-
Spoon gravy and onions over the top.
Optional Additions:
-
Add a splash of heavy cream or sour cream to the gravy for extra richness.
-
Sprinkle fresh parsley over the top for color and freshness.
