Slow Cooker Amish Cheesy Chicken Spaghetti

Ingredients:

  • 4 boneless, skinless chicken breasts

  • 1 (8 oz) package spaghetti (uncooked)

  • 2 cups shredded sharp cheddar cheese (plus extra for topping)

  • 1 cup shredded mozzarella cheese

  • 1 (10.5 oz) can cream of chicken soup

  • 1 (10.5 oz) can cream of mushroom soup

  • 1 cup chicken broth

  • 1 small onion, finely chopped (optional)

  • 2 cloves garlic, minced

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon paprika

  • Salt to taste

  • Fresh parsley or green onions for garnish (optional)

Instructions:

  1. Prepare the Slow Cooker:

    • Spray the inside of the slow cooker with non-stick cooking spray or lightly grease it to prevent sticking.

  2. Layer the Ingredients:

    • Place the chicken breasts in the bottom of the slow cooker.

    • In a medium bowl, mix together the cream of chicken soup, cream of mushroom soup, chicken broth, chopped onion, minced garlic, black pepper, paprika, and salt.

    • Pour the soup mixture over the chicken breasts evenly.

  3. Cook the Chicken:

    • Cover and cook on LOW for 4 to 5 hours, or on HIGH for 2 to 3 hours, until the chicken is cooked through and tender.

  4. Shred the Chicken:

    • Once the chicken is cooked, remove it from the slow cooker and shred it using two forks.

    • Return the shredded chicken back into the slow cooker and stir to mix it with the broth and soups.

  5. Add Cheese and Pasta:

    • Add the shredded cheddar and mozzarella cheeses into the slow cooker and stir until melted.

    • Break the spaghetti noodles in half and add them to the slow cooker.

    • Gently stir to coat the pasta with the sauce.

  6. Cook the Pasta:

    • Cover and cook on LOW for an additional 30 to 45 minutes or until the pasta is tender.

    • Check and stir occasionally to prevent the pasta from sticking to the sides or bottom.

  7. Final Touches:

    • Once the pasta is cooked, taste and adjust seasoning with salt and pepper if needed.

    • If you like, sprinkle extra shredded cheese on top, cover, and let it melt for a few minutes.

    • Garnish with chopped fresh parsley or green onions before serving.

Serving Suggestions:

  • Serve this Amish Cheesy Chicken Spaghetti with a side of steamed vegetables or a fresh green salad.

  • Garlic bread or crusty rolls also pair nicely to soak up the creamy sauce.
