🥩 Sizzling Chinese Pepper Steak with Onions

Ingredients:

  • Beef:

    • 1 lb (450g) flank steak or sirloin, thinly sliced against the grain

    • 1 tbsp soy sauce

    • 1 tbsp Shaoxing wine (or dry sherry)

    • 1 tsp cornstarch

    • ½ tsp baking soda (optional, for tenderizing)

  • Sauce:

    • 2 tbsp oyster sauce

    • 1 tbsp light soy sauce

    • 1 tbsp dark soy sauce (for color and depth)

    • 1 tsp sugar

    • 1 tsp cornstarch

    • ¼ cup (60 ml) water

    • ½ tsp freshly ground black pepper (or more to taste)

  • Stir-Fry:

    • 2 tbsp oil (peanut or vegetable)

    • 1 large onion, sliced into wedges

    • 1 green bell pepper, sliced

    • 1 red bell pepper, sliced

    • 2 cloves garlic, minced

    • 1 tsp ginger, minced

    • Optional: 1 tsp chili flakes or sliced fresh chilies for heat


Instructions:

  1. Marinate the beef:

    • Combine sliced beef with soy sauce, Shaoxing wine, cornstarch, and baking soda.

    • Let sit for 15–30 minutes while you prep other ingredients.

  2. Make the sauce:

    • Mix all sauce ingredients in a bowl and set aside.

  3. Stir-fry:

    • Heat a wok or large skillet over high heat until very hot.

    • Add 1 tbsp oil and sear the beef in a single layer (do it in batches if needed). Cook 1–2 minutes until browned. Remove and set aside.

    • Add the remaining oil to the pan. Stir-fry garlic, ginger, and onions for 1 minute.

    • Add bell peppers and stir-fry another 2 minutes until slightly tender but still crisp.

    • Return beef to the pan, give the sauce a stir, and pour it in.

    • Stir-fry everything together for another 1–2 minutes, until the sauce thickens and coats the meat and veggies.

  4. Serve:

    • Serve hot over steamed rice or noodles. Garnish with extra pepper or sesame seeds if desired.
