Simple Watermelon Cucumber Feta Salad

Ingredients:

  • 2 cups of watermelon, cubed

  • 1 cucumber, sliced thinly

  • 1/2 cup of feta cheese, crumbled

  • 1/4 red onion, thinly sliced (optional)

  • Fresh mint or basil leaves for garnish (optional)

  • 1-2 tbsp olive oil

  • 1 tbsp fresh lime juice or lemon juice

  • Salt and pepper to taste

Instructions:

  1. Prepare the ingredients: Cube the watermelon, slice the cucumber, and crumble the feta cheese.

  2. Combine: In a large bowl, gently toss together the watermelon, cucumber, and feta cheese.

  3. Add dressing: Drizzle the olive oil and lime or lemon juice over the salad. Season with salt and pepper to taste.

  4. Garnish: Add thinly sliced red onion (if using) and fresh mint or basil leaves on top for extra flavor and color.

  5. Chill: If possible, chill the salad in the fridge for about 10-15 minutes before serving. This lets the flavors meld together.
