Shrimp and Avocado Bowls with Mango Salsa & Lime-Chili Sauce

Ingredients:

For the Shrimp:

  • 1 lb shrimp, peeled and deveined

  • 1 tbsp olive oil

  • 1 tsp smoked paprika

  • 1/2 tsp garlic powder

  • Salt and pepper, to taste

  • Juice of 1 lime

For the Mango Salsa:

  • 1 ripe mango, peeled and diced

  • 1/2 red bell pepper, diced

  • 1/4 red onion, finely chopped

  • 1 small jalapeño, seeded and minced (optional, for heat)

  • 1/4 cup fresh cilantro, chopped

  • Juice of 1 lime

  • Salt to taste

For the Lime-Chili Sauce:

  • 1/4 cup Greek yogurt or sour cream

  • 1 tbsp lime juice

  • 1 tsp honey or agave

  • 1/2 tsp chili powder (or more to taste)

  • Pinch of salt

For the Bowl:

  • 2 ripe avocados, sliced

  • 2 cups cooked rice or quinoa

  • Mixed greens or shredded lettuce

  • Optional: sliced radishes, cucumber, or cherry tomatoes for extra crunch


Instructions:

  1. Prepare the Shrimp:

    • Toss shrimp with olive oil, smoked paprika, garlic powder, salt, pepper, and lime juice.

    • Heat a skillet over medium-high heat and cook shrimp for 2-3 minutes per side until pink and opaque. Set aside.

  2. Make the Mango Salsa:

    • In a bowl, combine diced mango, red bell pepper, red onion, jalapeño, cilantro, and lime juice.

    • Season with salt and mix gently. Let sit while you prepare the rest.

  3. Prepare the Lime-Chili Sauce:

    • In a small bowl, whisk together Greek yogurt, lime juice, honey, chili powder, and salt.

    • Adjust seasoning to taste and set aside.

  4. Assemble the Bowls:

    • Divide cooked rice or quinoa into bowls.

    • Top with mixed greens, shrimp, sliced avocado, and a generous scoop of mango salsa.

    • Drizzle with lime-chili sauce.

    • Add optional veggies if desired.

  5. Serve and Enjoy!
