Sautéed Mushroom and Broccoli Stir-Fry:

Here’s a simple and delicious recipe for a Sautéed Mushroom and Broccoli Stir-Fry:

Ingredients:

  • 2 cups broccoli florets (fresh or frozen)

  • 1 cup mushrooms, sliced (button, cremini, or any kind you prefer)

  • 2 tbsp olive oil or sesame oil

  • 2 garlic cloves, minced

  • 1-inch piece of fresh ginger, grated (optional)

  • 2 tbsp soy sauce or tamari (for a gluten-free option)

  • 1 tbsp oyster sauce (optional for extra flavor)

  • 1 tsp rice vinegar (optional for tanginess)

  • 1 tsp sesame seeds (optional for garnish)

  • Salt and pepper, to taste

  • Red pepper flakes (optional for some heat)

  • Green onions for garnish (optional)

Instructions:

  1. Prepare the Ingredients:

    • Wash and chop the broccoli into small florets.

    • Clean and slice the mushrooms.

    • Mince the garlic and grate the ginger if using.

  2. Blanch the Broccoli (Optional):

    • In a pot of boiling water, blanch the broccoli for 2-3 minutes until it’s bright green and slightly tender. Drain and set aside. You can skip this step if you’re short on time and want to keep it all in the stir-fry.

  3. Sauté the Mushrooms:

    • Heat 1 tablespoon of oil in a large skillet or wok over medium heat.

    • Add the sliced mushrooms and sauté for 5-7 minutes until they are soft and lightly browned. Remove the mushrooms from the pan and set aside.

  4. Sauté the Broccoli:

    • In the same pan, add another tablespoon of oil.

    • Add the garlic and ginger (if using) and sauté for 1 minute until fragrant.

    • Add the blanched broccoli (or fresh if not blanching) to the pan and stir-fry for 4-5 minutes, until tender yet crisp.

  5. Combine and Season:

    • Add the mushrooms back into the pan with the broccoli.

    • Stir in the soy sauce, oyster sauce (if using), rice vinegar, and red pepper flakes.

    • Toss everything together until well-coated and heated through.

  6. Finish and Serve:

    • Taste and adjust the seasoning with salt, pepper, or more soy sauce if needed.

    • Garnish with sesame seeds and chopped green onions (optional).

    • Serve hot as a side dish or over rice for a complete meal.
