Ingredients

1 cup long-grain white rice (or your preferred rice)

1 lb sausage (Italian sausage or smoked sausage, sliced or crumbled)

1 large onion, sliced

2 bell peppers (any color), sliced

2 medium tomatoes, diced (or 1 can diced tomatoes, drained)

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon smoked paprika (optional)

1/2 teaspoon dried oregano (optional)

Salt and pepper, to taste

2 cups chicken broth (or water)

Fresh parsley or cilantro for garnish (optional)
Instructions

Cook the rice:
Rinse the rice under cold water until clear. In a pot, bring 2 cups of chicken broth (or water) to a boil. Add the rice, reduce heat to low, cover, and simmer for about 15-18 minutes or until rice is tender and liquid absorbed. Fluff with a fork and set aside. -
Cook the sausage:
While the rice is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausage and cook until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside. -
Sauté the veggies:
