Sausage, Onion, Bell Peppers & Tomatoes Over Rice

Here’s a tasty and simple recipe for Sausage, Onion, Bell Peppers & Tomatoes Over Rice—a hearty, flavorful dish perfect for any day!


Ingredients

  • 1 cup long-grain white rice (or your preferred rice)

  • 1 lb sausage (Italian sausage or smoked sausage, sliced or crumbled)

  • 1 large onion, sliced

  • 2 bell peppers (any color), sliced

  • 2 medium tomatoes, diced (or 1 can diced tomatoes, drained)

  • 2 cloves garlic, minced

  • 2 tablespoons olive oil

  • 1 teaspoon smoked paprika (optional)

  • 1/2 teaspoon dried oregano (optional)

  • Salt and pepper, to taste

  • 2 cups chicken broth (or water)

  • Fresh parsley or cilantro for garnish (optional)


Instructions

  1. Cook the rice:
    Rinse the rice under cold water until clear. In a pot, bring 2 cups of chicken broth (or water) to a boil. Add the rice, reduce heat to low, cover, and simmer for about 15-18 minutes or until rice is tender and liquid absorbed. Fluff with a fork and set aside.

  2. Cook the sausage:
    While the rice is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausage and cook until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside.

  3. Sauté the veggies:
    In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onions and bell peppers, sauté until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

  4. Add tomatoes and seasoning:
    Stir in the diced tomatoes, smoked paprika, oregano, salt, and pepper. Cook for 3-4 minutes until tomatoes soften and meld with the veggies.

  5. Combine sausage & veggies:
    Return the cooked sausage to the skillet and stir everything together. Let it simmer for another 2-3 minutes to combine flavors.

  6. Serve:
    Spoon the sausage and veggie mixture over the cooked rice. Garnish with fresh parsley or cilantro if desired.


Tips

  • You can add a splash of hot sauce or red pepper flakes if you like some heat.

  • For a richer flavor, use spicy Italian sausage.

  • Swap the rice for quinoa or cauliflower rice for a healthier twist.
