Here’s a tasty copycat recipe for Ruby Tuesday Pasta Salad — creamy, tangy, and loaded with fresh veggies. Perfect as a side or light meal!


Ruby Tuesday Pasta Salad Recipe

Ingredients:

  • 8 oz rotini pasta (or any spiral pasta)

  • 1 cup cherry tomatoes, halved

  • 1/2 cup red bell pepper, diced

  • 1/2 cup cucumber, diced

  • 1/4 cup red onion, finely chopped

  • 1/2 cup shredded cheddar cheese (optional)

  • 1/4 cup black olives, sliced (optional)

  • 2 tbsp fresh parsley, chopped

For the Dressing:

  • 1/2 cup mayonnaise

  • 1/4 cup sour cream

  • 2 tbsp apple cider vinegar

  • 1 tbsp sugar

  • 1 tsp Dijon mustard

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/2 tsp garlic powder


Instructions:

  1. Cook Pasta: Boil pasta in salted water until al dente (about 8-10 minutes). Drain and rinse with cold water to cool.

  2. Prep Veggies: While pasta cooks, chop tomatoes, bell pepper, cucumber, onion, olives, and parsley.

  3. Make Dressing: In a bowl, whisk together mayonnaise, sour cream, vinegar, sugar, mustard, salt, pepper, and garlic powder until smooth.

  4. Combine: In a large bowl, toss cooled pasta with veggies, cheese, and dressing until evenly coated.

  5. Chill: Cover and refrigerate for at least 1 hour to let flavors meld.

  6. Serve: Give it a good stir and enjoy!


Want it a bit lighter? Swap mayo for Greek yogurt. Want it zingier? Add a splash of lemon juice or extra vinegar.
