Roasted potatoes

Here’s a simple and delicious roasted potatoes recipe for you!

Crispy Roasted Potatoes

Ingredients:

  • 2 pounds (about 1 kg) potatoes (Yukon Gold or Russet work well)

  • 3 tablespoons olive oil

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 teaspoon garlic powder (or 3 garlic cloves minced)

  • 1 teaspoon dried rosemary or thyme (optional)

  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Preheat oven: to 425°F (220°C).

  2. Prep potatoes: Wash and peel the potatoes (optional). Cut them into evenly sized chunks, about 1 to 1.5 inches.

  3. Parboil (optional but recommended): Place potatoes in a pot, cover with cold water, add a pinch of salt, and bring to a boil. Boil for 5 minutes, then drain well. This helps make them extra crispy.

  4. Season: In a large bowl, toss the potatoes with olive oil, salt, pepper, garlic powder, and rosemary or thyme if using.

  5. Roast: Spread potatoes out on a baking sheet in a single layer. Roast in the oven for about 30-40 minutes, flipping halfway through, until golden and crispy.

  6. Serve: Garnish with fresh parsley if you like, and serve hot!
