Here’s a  Rhubarb Muffins with Cinnamon Sugar Topping recipe. These muffins are moist, slightly tart from the rhubarb, and perfectly balanced with a sweet, crunchy cinnamon sugar topping.


🍓 Rhubarb Muffins with Cinnamon Sugar Topping

🧾 Ingredients

For the Muffins:

  • 2 cups (250 g) all-purpose flour

  • ¾ cup (150 g) granulated sugar

  • 2½ tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 1 tsp ground cinnamon

  • 1 large egg

  • ¾ cup (180 ml) buttermilk (or ¾ cup milk + 1 tsp lemon juice, rested 5 min)

  • ⅓ cup (80 ml) vegetable oil (or melted butter)

  • 1½ tsp pure vanilla extract

  • 1½ cups (150 g) diced fresh rhubarb (½-inch pieces)

For the Cinnamon Sugar Topping:

  • 2 tbsp granulated sugar

  • ½ tsp ground cinnamon

  • (Optional: 1 tbsp melted butter for brushing tops before sprinkling sugar)


👩‍🍳 Instructions

1. Prep the Oven and Pan

  • Preheat oven to 375°F (190°C).

  • Line a 12-cup muffin tin with paper liners or lightly grease it.

2. Mix Dry Ingredients

  • In a large bowl, whisk together:

    • 2 cups flour

    • ¾ cup sugar

    • 2½ tsp baking powder

    • ½ tsp baking soda

    • ½ tsp salt

    • 1 tsp cinnamon

3. Mix Wet Ingredients

  • In a separate medium bowl, whisk:

    • 1 egg

    • ¾ cup buttermilk

    • ⅓ cup oil

    • 1½ tsp vanilla

4. Combine Wet & Dry

  • Pour wet ingredients into the dry.

  • Stir gently just until combined (do not overmix).

  • Fold in the diced rhubarb.

5. Fill Muffin Cups

  • Spoon batter evenly into muffin cups (about ¾ full).

6. Cinnamon Sugar Topping

  • Mix 2 tbsp sugar + ½ tsp cinnamon in a small bowl.

  • (Optional: Brush muffin tops lightly with melted butter for extra crunch.)

  • Sprinkle cinnamon sugar generously over each muffin.

7. Bake

  • Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean and tops are golden.

8. Cool

  • Let cool in the pan for 5 minutes, then transfer to a wire rack.


🍽 Tips & Variations

  • Frozen Rhubarb? Thaw and drain before using.

  • Add-ins: A handful of chopped nuts or white chocolate chips pairs well.

  • Streusel topping alternative: Mix 2 tbsp butter, 2 tbsp brown sugar, 2 tbsp flour, and ¼ tsp cinnamon until crumbly.
