Refreshing Fruit Jelly Milk Cake Recipe

Here’s a refreshing recipe for Fruit Jelly Milk Cake — light, colorful, and perfect for warm days!


Ingredients

For the Milk Cake Base:

  • 1 cup all-purpose flour

  • 1 tsp baking powder

  • 3/4 cup sugar

  • 3 large eggs

  • 1/2 cup milk

  • 1/4 cup vegetable oil or melted butter

  • 1 tsp vanilla extract

For the Fruit Jelly:

  • 1 packet (about 85g) fruit-flavored gelatin (like strawberry, orange, or mixed fruit)

  • 1 cup boiling water

  • 1/2 cup cold water

For the Milk Layer:

  • 2 cups milk

  • 1/2 cup heavy cream

  • 1/4 cup sugar (adjust to taste)

  • 2 tbsp cornstarch

  • 1 tsp vanilla extract

Fresh Fruit for topping (optional):

  • Sliced kiwi, strawberries, blueberries, mango, etc.


Instructions

Step 1: Make the Fruit Jelly

  1. Dissolve the gelatin powder in 1 cup boiling water. Stir well until fully dissolved.

  2. Add 1/2 cup cold water and mix.

  3. Pour the jelly mixture into a shallow dish or square pan, about 1 cm thick.

  4. Refrigerate until set (at least 2-3 hours).

Step 2: Prepare the Cake Base

  1. Preheat oven to 350°F (175°C). Grease and line an 8-inch square baking pan.

  2. In a bowl, whisk eggs and sugar until light and fluffy.

  3. Add milk, oil (or melted butter), and vanilla extract. Mix well.

  4. Sift flour and baking powder, then gently fold into the wet ingredients until just combined.

  5. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted comes out clean.

  6. Let the cake cool completely.

Step 3: Make the Milk Layer

  1. In a saucepan, mix sugar and cornstarch.

  2. Gradually add milk and cream, stirring constantly to avoid lumps.

  3. Cook over medium heat, stirring until the mixture thickens to a pudding-like consistency.

  4. Remove from heat, stir in vanilla, and allow to cool slightly.

Step 4: Assemble the Cake

  1. Cut the set jelly into small cubes.

  2. Cut the cooled cake into slices or cubes.

  3. In serving glasses or a large dish, layer cake pieces, milk pudding, and jelly cubes.

  4. Repeat layers if desired.

  5. Top with fresh fruit slices for extra freshness.

Step 5: Chill and Serve

  • Refrigerate the assembled cake for at least 1 hour before serving to let the flavors meld and keep it cool.
