Rainbow Bundt Cake

Here’s a fun and colorful Rainbow Bundt Cake recipe for you! It’s a classic vanilla cake split into layers, each dyed a different vibrant color, baked in a bundt pan, and then frosted or dusted with powdered sugar.


Rainbow Bundt Cake Recipe

Ingredients:

  • 3 cups all-purpose flour

  • 1 tablespoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 cup unsalted butter, softened

  • 2 cups granulated sugar

  • 4 large eggs

  • 1 tablespoon vanilla extract

  • 1 cup buttermilk (or substitute: 1 cup milk + 1 tablespoon lemon juice, let sit 5 min)

  • Food coloring gel (red, orange, yellow, green, blue, purple)


Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and flour a bundt pan well.

  2. Mix dry ingredients: In a bowl, sift together flour, baking powder, baking soda, and salt. Set aside.

  3. Cream butter and sugar: In a large mixing bowl, beat the softened butter and sugar together until light and fluffy (about 3-5 minutes).

  4. Add eggs and vanilla: Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.

  5. Alternate adding dry ingredients and buttermilk: Add about 1/3 of the dry ingredients, mix until combined, then 1/2 of the buttermilk, mix, then repeat until all ingredients are combined. Be careful not to overmix.

  6. Divide the batter: Divide the batter evenly into 6 small bowls (about 1 cup batter each).

  7. Color the batter: Add a different gel food coloring to each bowl (red, orange, yellow, green, blue, purple). Mix well to get vibrant colors.

  8. Layer the batter: Starting with one color, pour it into the center of the bundt pan. Then pour the next color right on top in the center of the previous color. Repeat with all colors. The batter will spread outward, creating a rainbow layer effect.

  9. Bake: Bake for 45-55 minutes, or until a toothpick inserted in the center comes out clean.

  10. Cool: Let the cake cool in the pan for 10-15 minutes, then invert onto a wire rack to cool completely.

  11. Optional frosting: Dust with powdered sugar or glaze with vanilla glaze or cream cheese frosting.


Vanilla Glaze (optional):

  • 1 cup powdered sugar

  • 1-2 tablespoons milk

  • 1/2 teaspoon vanilla extract

Mix together until smooth and drizzle over the cooled cake.
