🍽️ Makes 8–10 small fritters
Ingredients:

1 cup corn kernels (fresh, canned, or frozen & thawed)

1/2 cup all-purpose flour

1/4 cup cornmeal (optional for extra crispiness)

1/4 cup milk (or any plant-based milk)

1 large egg
-
1/4 cup chopped green onions (or chives)

1/2 tsp baking powder

Salt & pepper to taste

Pinch of paprika or chili flakes (optional)

1–2 tbsp oil (for frying)
Instructions:

Mix the batter:
In a bowl, whisk the egg and milk together. Stir in the flour, cornmeal (if using), baking powder, salt, pepper, and paprika. Mix until just combined. -
Add the corn & onions:
Fold in the corn kernels and chopped green onions. -
Heat oil:
In a skillet over medium heat, add 1–2 tbsp of oil. -
Cook the fritters:
Scoop 2 tablespoons of batter per fritter into the pan. Flatten slightly with a spatula. Fry for 2–3 minutes per side until golden brown. -
Drain & serve:
Place on a paper towel-lined plate. Serve warm with sour cream, yogurt, or a spicy dipping sauce.
