Here’s a Quick and Easy Pan-Fried Corn Fritters recipe—crispy on the outside, soft and sweet inside. Perfect as a snack, side, or even breakfast!


🌽 Quick and Easy Pan-Fried Corn Fritters

🕒 Ready in 20 minutes

🍽️ Makes 8–10 small fritters


Ingredients:

  • 1 cup corn kernels (fresh, canned, or frozen & thawed)

  • 1/2 cup all-purpose flour

  • 1/4 cup cornmeal (optional for extra crispiness)

  • 1/4 cup milk (or any plant-based milk)

  • 1 large egg

  • 1/4 cup chopped green onions (or chives)

  • 1/2 tsp baking powder

  • Salt & pepper to taste

  • Pinch of paprika or chili flakes (optional)

  • 1–2 tbsp oil (for frying)


Instructions:

  1. Mix the batter:
    In a bowl, whisk the egg and milk together. Stir in the flour, cornmeal (if using), baking powder, salt, pepper, and paprika. Mix until just combined.

  2. Add the corn & onions:
    Fold in the corn kernels and chopped green onions.

  3. Heat oil:
    In a skillet over medium heat, add 1–2 tbsp of oil.

  4. Cook the fritters:
    Scoop 2 tablespoons of batter per fritter into the pan. Flatten slightly with a spatula. Fry for 2–3 minutes per side until golden brown.

  5. Drain & serve:
    Place on a paper towel-lined plate. Serve warm with sour cream, yogurt, or a spicy dipping sauce.


✅ Tips:

  • For extra flavor, add shredded cheese or diced jalapeños.

  • Use a nonstick skillet to minimize oil.
