🧺 You’ll Need:

  • 4 large apples (Honeycrisp or Fuji work great)

  • 1 cup canned pumpkin

  • 2 tbsp brown sugar

  • 1 tsp pumpkin pie spice

  • 1/2 tsp cinnamon

  • 1 tsp vanilla extract

  • 1 egg (optional for firmer filling)

  • Crushed graham crackers or granola (for topping)

  • Whipped cream or vanilla ice cream (optional but recommended!)

  1. Prep apples: Slice off tops and scoop out the core to create a “bowl”.

  2. Mix filling: Combine pumpkin, sugar, spices, vanilla, and egg (if using).

  3. Stuff ’em: Spoon filling into apples.

  4. Top it: Sprinkle crushed graham crackers or granola.

  5. Bake: Place in a baking dish with a splash of water. Bake at 350°F (175°C) for 30–40 min until apples are tender.
