Here’s a  recipe for Pumpkin Pie French Toast — perfect for cozy mornings or brunch with a fall vibe. It combines the warm spices of pumpkin pie with classic French toast goodness.


Pumpkin Pie French Toast Recipe

Ingredients

For the custard batter:

  • 4 large eggs

  • 1 cup whole milk (or half-and-half for richer taste)

  • 1/2 cup canned pumpkin puree (NOT pumpkin pie filling)

  • 2 tbsp brown sugar (light or dark)

  • 1 tsp vanilla extract

  • 1 tsp ground cinnamon

  • 1/2 tsp ground ginger

  • 1/4 tsp ground nutmeg

  • 1/4 tsp ground cloves (optional)

  • Pinch of salt

For the French toast:

  • 8 slices of thick bread (brioche, challah, or Texas toast work best)

  • Butter or oil, for cooking

Optional toppings:

  • Maple syrup

  • Whipped cream

  • Powdered sugar

  • Chopped pecans or walnuts

  • Extra cinnamon


Instructions

  1. Make the custard batter:
    In a large bowl, whisk together eggs, milk, pumpkin puree, brown sugar, vanilla, cinnamon, ginger, nutmeg, cloves, and salt until smooth and fully combined.

  2. Prepare the bread:
    Lay out the bread slices on a plate or baking sheet.

  3. Soak the bread:
    Dip each slice of bread into the pumpkin custard mixture, letting it soak for about 20–30 seconds per side. Make sure each slice is coated but not falling apart.

  4. Heat the pan:
    Heat a large skillet or griddle over medium heat. Add a little butter or oil to coat the surface.

  5. Cook the French toast:
    Place soaked bread slices on the hot skillet. Cook until golden brown on one side, about 3–4 minutes, then flip and cook the other side for another 3–4 minutes. Adjust heat as needed to avoid burning.

  6. Serve immediately:
    Stack the French toast on plates and add your favorite toppings—maple syrup, whipped cream, a dusting of powdered sugar, or some chopped nuts for crunch.


Tips

  • Bread choice: Thick slices work best because they soak up the custard without falling apart. Stale or day-old bread is even better for soaking.

  • Pumpkin puree: Use pure pumpkin, not pumpkin pie filling (which is sweetened and spiced already).

  • Make it vegan: Use a plant-based milk and egg substitute like flax eggs.

  • Batch cooking: Keep cooked French toast warm in a 200°F (93°C) oven on a baking sheet while cooking the rest.
