🥔 Potato Rolls with Minced Meat Filling

✅ Ingredients:

For the potato dough:

  • 4 large potatoes (about 800g), peeled and boiled

  • 1 egg

  • 1/2 cup all-purpose flour (more as needed)

  • Salt and pepper to taste

For the meat filling:

  • 250g (about 1/2 lb) minced meat (beef, chicken, or lamb)

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tbsp oil

  • Salt and pepper to taste

  • 1/2 tsp paprika (optional)

  • Fresh herbs (parsley or dill), finely chopped

For coating & frying (optional):

  • 1 egg (beaten)

  • Bread crumbs

  • Oil for shallow frying


🧑‍🍳 Instructions:

  1. Prepare the Potato Dough:

    • Mash the boiled potatoes until smooth and let cool slightly.

    • Mix in the egg, flour, salt, and pepper. The dough should be soft but hold its shape. Add more flour if needed.

  2. Cook the Meat Filling:

    • Heat oil in a pan over medium heat.

    • Sauté the onion until translucent, then add garlic and cook for 30 seconds.

    • Add the minced meat, cook until browned. Season with salt, pepper, and paprika.

    • Stir in herbs, then remove from heat and let cool.

  3. Form the Rolls:

    • Take a small handful of potato dough and flatten into a patty.

    • Place 1–2 tsp of the meat filling in the center.

    • Gently fold the edges over the filling and shape into a roll or oval.

    • Repeat with remaining dough and filling.

  4. (Optional) Coat and Fry:

    • Dip each roll in beaten egg, then coat with breadcrumbs.

    • Fry in hot oil until golden brown on all sides.

    • Drain on paper towels.
