Total Time: 1 hour 35 minutes
🛒 Ingredients
-
6 boneless pork chops (or bone-in, adjust cooking time)
-
4 medium potatoes, peeled and thinly sliced
-
1 can (10.5 oz) cream of onion soup
-
1/4 cup dry onion soup mix
-
1/4 cup milk
-
2 tablespoons olive oil
-
Salt and pepper to taste
👩🍳 Instructions
-
Preheat the Oven: Set your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with cooking spray or olive oil.
-
Prepare the Pork Chops: Season the pork chops with salt and pepper. In a skillet over medium-high heat, heat the olive oil. Sear the pork chops for 2-3 minutes on each side until browned. Remove from heat and set aside.
-
Assemble the Dish: Layer the sliced potatoes evenly in the bottom of the prepared baking dish. Place the seared pork chops on top of the potatoes.
-
Prepare the Sauce: In a bowl, combine the cream of onion soup, dry onion soup mix, and milk. Mix until smooth. Pour this sauce evenly over the pork chops and potatoes.
-
Bake: Cover the baking dish with aluminum foil and bake for 60 minutes. After 60 minutes, remove the foil and bake for an additional 10-15 minutes to allow the top to brown.
-
Serve: Let the dish rest for a few minutes before serving. This dish pairs wonderfully with a crisp green salad or steamed vegetables.
💡 Tips & Variations
-
Cheese Lover’s Twist: For a cheesy variation, sprinkle shredded cheddar cheese over the pork chops during the last 10 minutes of baking.
-
Herb Infusion: Add fresh herbs like thyme or rosemary on top of the pork chops before baking for added flavor.
-
Creamy Upgrade: Substitute the cream of onion soup with cream of mushroom soup for a different creamy base.
