Posted on June 12, 2025

Certainly! Here’s a delightful recipe for Pistachio Pineapple Delight, also known as Watergate Salad, a retro dessert that’s making a comeback. This creamy, no-bake treat combines the flavors of pistachio, pineapple, and marshmallows, perfect for gatherings or a refreshing treat.

🥥 Pistachio Pineapple Delight (Watergate Salad)

🍍 Ingredients:

  • 1 can (20 oz) crushed pineapple, undrained

  • 2 (3.4 oz) boxes instant pistachio pudding mix

  • 1 (8 oz) tub non-dairy whipped topping (e.g., Cool Whip), thawed

  • 2 cups mini marshmallows

  • 1 cup chopped pistachios (or walnuts)

🍽️ Instructions:

  1. In a large bowl, combine the undrained crushed pineapple with the pistachio pudding mix. Stir until the mixture begins to thicken.

  2. Fold in the whipped topping and mini marshmallows until well combined.

  3. Gently stir in the chopped pistachios.

  4. Cover and refrigerate for at least 1 hour to allow the flavors to meld and the texture to set.

  5. Before serving, fluff with a spoon and garnish with additional pistachios if desired.

This dessert can be stored in the refrigerator for up to 2 days.

🍰 Variations to Try:

  • Add shredded coconut: Incorporate ½ cup of sweetened shredded coconut for added texture and flavor.

  • Use different nuts: Swap pistachios for walnuts or pecans to suit your preference.

  • Include maraschino cherries: Garnish with maraschino cherries for a festive touch.

  • Make it a layered dessert: For a more decadent version, create layers with a graham cracker crust and additional whipped topping.
